3-Ingredient Samoa Girl Scout Cookies
If you’re looking for a guilt-free, no bake and clean ingredient snack, then you need to give these cookies a try! Follow along on the step-by-step process here.
Ingredients:
2 cups of Coconut Shreds
2 cups of Dates (pitted)
1/2 cup semi-sweet or dark chocolate (melted)
1 teaspoon olive or coconut oil
The Process:
One a parchment-paper lined baking sheet, spread the coconut shreds out evenly.
In a 350 degree oven, place the coconut shreds in the oven to toast for 5 minutes or until golden brown and fragrant.
In a food processor or blender, combine the dates and coconut shreds and pulse until coarsely grounded.
Form into 1” balls and flatten out in a 1/2 inch disc. Using a straw, create a circle in the middle of each cookie. Do this step until there’s no more cookie dough left.
Place them in the refrigerator or freezer for 15-30 minutes.
In a double boiler or microwave, melt the the oil and chocolate together.
Take the cookies out of the fridge/freezer.
Dip the bottom of the cookies into the chocolate and place on the parchment paper. Repeat this step for all of the cookies.
Using a spoon, drizzle chocolate on top of the cookies.
Place chocolate covered cookies in the fridge for 15 minutes until the chocolate solidifies.
