7-Ingredient Chocolate Date Energy Bites

 
 

I’m usually not a huge breakfast person in the mornings, so these Date energy balls provide with me enough energy. Having just 2-3 of the date balls will keep me full for a couple hours. You can follow along on how I make these here on IG.

Ingredients

  • 1 cup of Dates (pitted)

  • 1/2 cup Walnuts

  • 1/2 cup Coconut Shreds

  • 1/4 cup Cocoa Powder

  • 1/2 cup Peanut Butter

  • 1 teaspoon Vanilla Extract

  • 1 teaspoon Cinnamon

  • Optional: 1/2 cup Shredded Coconut(for rolling the date balls in)

The Process:

  1. In a food processor, combine the dates, walnuts, coconut shreds, cocoa powder, peanut butter, vanilla extract and cinnamon. Pulse until completely combined.

  2. Using a tablespoon, scoop up some of the mixture and roll into small balls (Pro Tip: wet your palms between rolling each ball, since this will help keep everything together)

  3. Roll balls into the finely shredded coconut shreds, so the balls are coated.

  4. Refrigerate overnight. Makes up to 12-14 small balls.

  5. Enjoy!
