Linguine and Scallops in Marinara Sauce
We picked up some scallops a few days ago, and decided to whip up something quick and easy.
Let me tell you… scallops will make your regular pasta dish 1000% way more elevated.

Ingredients
1 pack of linguine pasta (we used Chickpea linguine pasta)
1 lb scallops
1/2 onion
2 garlic cloves
1 tablespoon oregano
1/2 Lemon
3 tablespoons of olive oil
1 tablespoon Old Bay seasoning
1/4 teaspoon black pepper
1/4 salt (optional)
14 oz marinara sauce
Parmesan Cheese (grated)
Parsley (for garnish)
The Process
Rinse the scallops and drain.
Season the scallops with the Old Bay seasoning.
On medium heat, add the olive oil and pan-sear the scallops for 3-5 minutes until opaque in color. Remove from heat and set aside in a bowl.
In the same pot, add about 2 tablespoons of the liquid in the scallops bowl.
Add the onions, garlic, and the oregano to the pot. Sauté for 5 minutes or until translucent.
Squeeze 1/2 lemon juice into the pot and stir.
Pour in the marinara sauce and stir for 2 minutes.
Add the scallops to the marinara mixture. Stir and let sit to cook for 10-12 minutes.
In a pot, bring water to a boil and add the pasta. Cook according to the instructions on the package.
After the pasta is done, serve with linguine and add the marinara scallops sauce on top.
Garnish with parsley.
