Chocolate Chip Banana Bread
When you have extra ripe bananas, instead of tossing them, make some banana bread! It’s absolutely so easy and incredibly moist! I’ve made banana bread many times before, but this recipe is a winner. The chocolate chips made it more fun and 10 times better. You’re welcome =)
I’ve been aiming to create sugar-free recipes, however I don’t want to skimp on the taste. I’ve been using the Truvia Sweet Complete Brown Calorie-Free Sweetener with the Stevia Leaf for my sugar replacement. It has zero grams of sugar and it taste just as good. For the chocolate chips, I also went for a sugar-free version by Russell Stover. We often think a “sugar-free” alternative will ruin that great taste we’re use to. I’m a true foodie, so I make sure to search for alternatives that don’t taste like crap. These sugar-free options are 10/10!!!

Ingredients
4 Ripened Bananas (mashed)
1/2 cup brown sugar
2 eggs (room temperature)
1/2 cup unsalted butter (1 stick)
2 teaspoon vanilla extract
1 1/4 cup all purpose flour
2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup semi-sweet mini chocolate chips
The Process
Preheat the oven to 350 degrees.
In a large bowl, mash the ripe bananas.
Add the melted butter, eggs, sugar, and vanilla to the bananas. Mix until smooth.
Add the all purpose flour, baking powder and salt to the wet mixture. Combine evenly until smooth. (Do not over mix)
Stir in the chocolate chips.
Transfer the batter to a greased or parchment paper lined loaf pan.
Top the batter with extra chocolate chips.
Bake for 50 minutes or until a toothpick comes out clean.
Let cool for 15-20 minutes.
Cut into slices.
