Cozy Fall Baking: Lemon Blueberry Loaf

 
 

Fall is finally here! 🍂 My absolute favorite season, and I’m pretty excited about it. Fall means more and more cozy cooking and baking, and I’m always looking for new recipes that bring the warmth of the season into my kitchen. That’s why I’m sharing this quick and easy Lemon Blueberry Loaf recipe using ingredients you probably already have in your pantry. It's the most moist and fluffy loaf you’ll ever taste! Perfect for breakfast, brunch, or an afternoon treat with a cup of tea.

Ingredients You’ll Need:

  • 1 cup packed brown sugar

  • 1/2 cup unsalted butter (room temperature)

  • 2 large eggs (room temperature)

  • 1 tablespoon lemon zest

  • 2 tablespoons lemon juice

  • 1/2 teaspoon salt

  • 1 1/2 cups all-purpose flour + 1-2 tablespoons of flour

  • 1 teaspoon baking powder

  • 1/2 cup whole milk

  • 1 cup whole fresh blueberries


The Process:

  1. Preheat your oven to 350°F and line a loaf pan with parchment paper.

  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.

  3. In a small bowl, mix the blueberries with 1-2 tablespoons of flour until the blueberries are evenly coated. Set aside.

  4. In a separate large bowl, cream together the butter and sugar until light and fluffy—this should take about 3 to 5 minutes.

  5. Beat in the eggs, lemon juice, and lemon zest until well incorporated.

  6. Gradually add the dry mixture into the wet mixture, mixing gently.

  7. Slowly add in the milk and stir until the batter comes together. Scrape the sides of the bowl as needed.

  8. Gently fold in the blueberries using a spatula.

  9. Pour the batter into the parchment paper lined prepared pan and smooth the top. (Pro-Tip: butter the exposed sides on the loaf pan to avoid the loaf from sticking).

  10. Bake for 55-65 minutes or until the top is cracked, raised, and golden brown. The loaf should be firm to the touch, and a toothpick inserted into the center should come out clean.

  11. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
