Easy & Yummy Curry Shrimp Recipe

 
 

Growing up in a Jamaican household, curry dishes have always been a staple. The key to a really good curry dish is really good curry; it’s that simple. If you are planning on making an authentic curry dish, stay away from the standard curry powders in the supermarket. I’d recommend going to a multicultural supermarket or local grocery store where they sell different cultural produce and products. Luckily, I grabbed some curry powder from my recent trip to Jamaica, and I can always ask my mom to get me some locally where she lives in the Bronx.

Other than that, curry dishes are really easy to make, so here is a standard curry shrimp recipe that’s a regular in our household.

Ingredients:

1 lb of shrimp (shell removed and deveined)

1 bell pepper

1 onion

1 teaspoon grated ginger

4-5 tablespoons of curry powder

1 tablespoon black pepper

2 teaspoons salt

2 tablespoons all purpose seasoning (of your choice)

Long Grain White Rice

Asparagus or Veggies of choice

Olive oil

Water

The Process:

  1. Clean and devein the shrimp. Rince with water and drain.

  2. Slice up the bell pepper and onions and add to the bowl of shrimp.

  3. Add the grated ginger, curry powder, all purpose seasoning, salt and pepper to the shrimp. Mix until combine.

  4. Add 2 tablespoons of olive oil to pan on medium heat.

  5. Toss the curry shrimp mixture into the pan and sauté for 5 minutes.

  6. Add 1 cup of water to the pan and cover. Let simmer for 15-20 minutes until thickened to a smooth curry gravy.

  7. Begin cooking the rice - follow the instructions on the pack.

  8. Steam or roast the asparagus, or veggies of your choice.

  9. Serve the rice and the curry shrimp on top, with the veggies on the side.

  10. Enjoy!
