Chickpea Burgers with Gruyère Cheese & Chipotle Aioli
This summer, I’ve been working on being less wasteful and using everything I have in my kitchen before making a trip to the supermarket. So the other day, I went shopping in my pantry to figure out what I wanted to make for dinner, and I had several bean options: black bean, chickpeas, and red kidney beans. I opted for the chickpeas and toyed with the idea of a curry chickpea dish or burgers, and burgers were the winner!
The recipe is easy and quick, and packed with tons of flavor and protein. And if you’re aiming to cut out meat a bit in your diet, this is a great option. Here is the recipe and an IG reel where you can follow along.
Ingredients: Burgers
1 can of chickpeas (15.5 oz) (drained and rinsed)
6-8 Hamburger Buns
1/2 red onion (chopped)
1/2 bell pepper (chopped)
1/2 cup breadcrumbs
1 egg
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon black pepper
1/2 of lemon (juiced)
1 teaspoon all purpose seasoning of choice
1/4 cup olive oil (for frying)
1/2 cup gruyère cheese (shredded)
Toppings (tomatos, pickles, onions, etc.)
Ingredients: Chipotle Aioli
2 tablespoons of mayo
2 tablespoons of hot sauce or chipotle hot sauce
The Process:
Chop up the onions and peppers and set aside.
In a food processor, combine the rinsed chickpeas, peppers, onions, egg, breadcrumbs, oregano, garlic powder, paprika, black pepper, salt, lemon juice, and all purpose seasoning in a food processor. Pulse several times until coarsely combined.
With a spoon, take a heaping spoonful of the chickpea mixture, form balls and flatten into patties. You should be able to make 6-8 patties.
Pour half of the olive oil in a frying pan and heat up on medium heat.
Pan fry the chickpea patties on each side for 2 minutes or until golden brown and then flip.
After frying on both sides, place on a paper towel to drain.
To make the aioli, combine the mayo and chipotle hot sauce in a bowl and mix until combined.
Put the burgers in the oven, topped with gruyere cheese and let heat up for 3-5 minutes until melted in a 350 degree oven.
Prep your burger with the aioli on the bun and your favorite toppings (lettuce, tomato, pickles, ketchup, etc.)
