White Wine Garlic Shrimp Garden Salad

I love me a good salad, but it can get real boring really quickly. Last week, I decided to throw together some produce I had, and make use of the shrimp we had in a different way. After perusing Pinterest for some inspiration, here’s a mashup of what I came up with.

Ingredients

Shrimp

  • 1 lb medium shrimp, peeled and deveined

  • 3-4 Tablespoon Old Bay Seasoning

  • 1 tablespoon olive oil

  • 2 tablespoons butter

  • 4 cloves garlic, minced

  • 1/2 small yellow onion, minced

  • 1/3 cup white wine

  • 1/4 teaspoon salt

  • fresh ground black pepper, to taste

  • 1 tablespoon fresh lemon juice

Salad

  • 1/2 Iceberg Lettuce (rinsed)

  • 3 Cups of Arugula or Spring Mix (rinsed)

  • 1 Avocado (rinsed & sliced)

  • 1/4 Red Onion (sliced)

  • 1 Cucumber (rinsed & sliced)

  • 1 Tomato (rinsed & sliced)

  • 1 Can of Sweet Corn (rinsed)

  • 1/4 Cup Feta Cheese

Dressing

1/3 cup Red Wine Vinegar

1/3 Cup Extra Virgin Olive Oil

1 Tablespoon Honey

Pinch of Sea Salt

Pinch of Black Pepper

The Process

Shrimp

  1. Rinse, drain and pat dry the shrimp with paper towels.

  2. In a bowl, add the shrimp and Old Bay seasoning, and mix until the shrimp is coated and covered.

  3. Heat the skillet over medium-high heat, and add butter and olive oil.

  4. ASaute garlic and onion in the pan until golden brown and fragrant.

  5. Add the white wine to the pan and simmer the sauce for 2 minutes.

  6. Next, add shrimp to the pan and cook until pink. Reduce the heat to medium-low and bring to a simmer. Let the shrimp cook for 5 minutes and add salt and ground black pepper to taste.

  7. Top with lemon juice and parsley and set aside.

Dressing

  1. In a bowl, add the red wine vinegar, olive oil, honey, salt and pepper.

  2. Whisk until combined. Set aside.

Salad

  1. Chop up the iceberg lettuce into chunks. Rinse with water.

  2. Cut the tomato, red onion, avocado and cucumber into slices and set aside.

  3. Rinse the spring mix with water.

  4. In a serving plate, lay the lettuce and the spring mix on top.

  5. Add the tomatoes, avocados, red onion, and cucumbers on top of the greens.

  6. Sprinkle the corn on top.

  7. Sprinkle in the Feta Cheese.

  8. Serve the salad, drizzle the dressing and and top plate with shrimp.
