Homemade Granola Bars
When I say I’m never buying granola bars from the store again, I’m not kidding. This recipe is a thousand times better, and you know exactly what the ingredients are. And my 1.5 year old loves it too, so that’s a major plus!

Ingredients
2 1/2 cups oats
1/2 cup whole almonds/cashews, coarsely chopped (optional)
1/3 cup honey
1/4 cup unsalted butter
1/4 cup packed light brown sugar
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon fine sea salt
1/2 cup dried cranberries, coarsely chopped
1/4 cup mini chocolate chips
The Process
Preheat the oven to 350 degrees Fahrenheit.
Mix oats and nuts together. Toast for 25 minutes in the oven on a sheet pan, until golden brown.
In a pot, melt butter, and mix in brown sugar, vanilla, cinnamon, nutmeg, salt, and honey. Mix for 3-5 minutes.
Pour honey butter mixture in oats and mix.
Mix in chocolate chips and dried cranberries.
Put oat mixture in pan and flatten out with spatula.
Wet hands and flatten the mixture even more.
Put in fridge for two hours.
Cut into square or rectangular pieces.
