The Fluffiest Blueberry Pancakes
The mother of all things lifestyle, Martha Stewart, inspired this recipe! I’ve tried a few pancake recipes over the years and I never found one I truly enjoyed. They were either mediocre or straight up disgusting. So the fact that I keep coming back to this recipe is proof that these pancakes are delicious! What I love about them are how fluffy and airy they are. So freaking good!!! Give then a try, you won’t regret it.
Ingredient:
1 cup all-purpose flour, (spooned and leveled)
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup milk
2 tablespoons unsalted butter, melted, or vegetable oil
1 large egg
1 tablespoon olive oil
1/4 Fresh Blueberries or any fruit of choice (chopped or blended)
Assorted toppings, such as butter, maple syrup, confectioners’ sugar, honey, jams, preserves, sweetened whipped cream, or chocolate syrup
The Process:
Combine all dry ingredients in a bowl.
Add the milk, butter and eggs to the dry mixture and whisk until combine.
On a medium-heat skillet, pour batter to create 3” pancakes or your desired size.
Once the other side is golden brown, flip and let the other side brown.
Once done, serve with eggs, fruit and yogurt with granola.
